What you'll need

Everything here is a real ingredient you can find in a normal shop. Nothing artificial, no powders pretending to be sugar. Here is the full list, with the quantities I actually use.

How to make it

Mash the tvorog well; mix with eggs, honey, vanilla, lemon zest and salt.

Stir in the flour until a soft, slightly sticky dough forms (don't add too much or they turn tough).

With floured hands, shape into small thick patties; dust lightly in flour.

Fry in butter over medium-low heat 3–4 minutes per side until deep golden and set through. Keep the heat gentle so the centers cook before the outsides burn.

Serve warm with honey, sour cream and berries.

Storage

Keep it covered in the fridge and it will hold for three to four days. If you are making it ahead, hold back any fresh topping until just before you serve so nothing goes soft. Most of these freeze well too, wrapped tight, for up to three months.

  • 2 cups (450 g) tvorog / dry farmer's cheese
  • 2 eggs
  • 3 tbsp raw honey (plus more to serve)
  • 1/3 cup (40 g) flour or semolina, plus extra for shaping
  • 1 tsp vanilla, zest of 1/2 lemon, pinch salt
  • Butter or coconut oil for the pan
  • To serve: honey, sour cream, berries
