What you'll need

Everything here is a real ingredient you can find in a normal shop. Nothing artificial, no powders pretending to be sugar. Here is the full list, with the quantities I actually use.

How to make it

Blend watermelon, honey, lime, mint and salt until smooth.

Pour into a shallow freezer-safe dish (the shallower, the faster it freezes evenly).

Making Watermelon Mint Granita

Freeze 1 hour, then scrape all over with a fork to make icy flakes.

Repeat the fork-scraping every 30–45 minutes, 3–4 times, until fluffy and crystalline.

Scoop into glasses; garnish with mint.

Storage

Keep it covered in the fridge and it will hold for three to four days. If you are making it ahead, hold back any fresh topping until just before you serve so nothing goes soft. Most of these freeze well too, wrapped tight, for up to three months.

  • 2 tbsp raw honey (only if the melon isn't very sweet)
  • Juice of 1 lime
  • 8 fresh mint leaves
  • Pinch salt
