What you'll need

Everything here is a real ingredient you can find in a normal shop. Nothing artificial, no powders pretending to be sugar. Here is the full list, with the quantities I actually use.

How to make it

Whisk egg yolks, cornstarch and a splash of the milk to a smooth slurry.

Warm the rest of the milk with the mashed banana and salt until steaming.

Making Banana "Nice" Custard Pots

Slowly whisk the hot milk into the yolk slurry, then return all to the pan.

Cook over low heat, whisking constantly, until thickened to custard (about 4–5 min). Stir in vanilla.

Pour into 4 pots; press plastic on the surface to prevent skin. Chill. Top with banana and cinnamon.

Storage

Keep it covered in the fridge and it will hold for three to four days. If you are making it ahead, hold back any fresh topping until just before you serve so nothing goes soft. Most of these freeze well too, wrapped tight, for up to three months.

  • 2 very ripe bananas, mashed smooth
  • 2 cups (480 ml) milk of choice
  • 3 egg yolks
  • 2 tbsp cornstarch
  • 1 tsp vanilla, pinch salt
  • Optional: banana slices and cinnamon to top
