What you'll need

Everything here is a real ingredient you can find in a normal shop. Nothing artificial, no powders pretending to be sugar. Here is the full list, with the quantities I actually use.

How to make it

Warm the milk with salt until steaming.

Rain the semolina in slowly while whisking constantly (this prevents lumps).

Making Semolina & Honey Pudding (Manniy-Style)

Cook on low, stirring, 5–7 minutes until thick and smooth.

Off the heat, stir in vanilla and honey.

Serve warm with a pat of butter melting on top, a swirl of honey and berries.

Storage

Keep it covered in the fridge and it will hold for three to four days. If you are making it ahead, hold back any fresh topping until just before you serve so nothing goes soft. Most of these freeze well too, wrapped tight, for up to three months.

  • 1/2 cup (85 g) fine semolina
  • 3 cups (720 ml) milk of choice
  • 2 tbsp raw honey (off heat)
  • 1 tsp vanilla, pinch salt
  • To serve: a little butter, honey, fresh or stewed berries
