Spiced Baked Apples with Walnuts & Honey (Pechyonye Yabloki)
Pechyonye yabloki — whole apples baked soft and collapsing, stuffed with walnuts, raisins and honey until they caramelize. The babushka dessert, and the healthy answer to the air-fryer baked-apple trend.

Why you'll love this recipe
- An old world recipe, made the way it always was
- One of the most-requested recipes here
- Not one spoon of refined sugar
- Sweetened with real honey
- Makes enough for 4
What you'll need
Everything here is a real ingredient you can find in a normal shop. Nothing artificial, no powders pretending to be sugar. Here is the full list, with the quantities I actually use.
- 4 large baking apples (Antonovka, Bramley or Honeycrisp)
- 1/3 cup chopped walnuts
- 1/4 cup raisins
- 3 tbsp raw honey
- 1 tsp cinnamon, pinch cloves
- 1 tbsp butter, divided
- Splash of water in the dish
How to make it
Preheat oven to 350°F (175°C). Core the apples, leaving the base intact to hold the filling.
Mix walnuts, raisins, cinnamon and cloves; stuff into the apples.

Drizzle honey into and over each; top with a small piece of butter.
Set in a dish with a splash of water; bake 30 minutes until soft and bubbling.
Spoon the pan juices over. Serve warm, with yogurt if you like. (Air-fryer: 350°F/175°C about 15 minutes.)
Storage
Keep it covered in the fridge and it will hold for three to four days. If you are making it ahead, hold back any fresh topping until just before you serve so nothing goes soft. Most of these freeze well too, wrapped tight, for up to three months.
